Chocolate, hazelnut, peanut butter granola

Chocolate, hazelnut & peanut butter granola (Keeps in the fridge for 7-10 days)

2 1/2 cups oats

1/2 cup - 1 cup pumpkin seeds

1 cup nuts (I used hazelnuts, pecans + almonds)

1/2 cup maple syrup

1/2 cup extra virgin olive oil

2 tbsps cocoa powder

6 tbsps peanut butter

To make:

○ Oven at 160C

○ In a large bowl combine all dry ingredients, including the cocoa powder

○ Over a gentle heat combine oil, maple syrup + peanut butter

○ Warm gentles until combined

○ Mix wet + dry

○ Spread on parchment paper in a baking tin, getting the mixture as evenly spread as possible

○ Bake for 45-55 minutes (this varies depending on how thinly spread the granola is so watch closely towards the end)

○ Break up into chunks

○ Enjoy with yogurt, muesli, berries, banana, or to top a smoothie!
