Nutty coconut banana granola - simple!

8 ingredients ║ 1 hour 15 minutes ║ 20 servings (approx)


6 cups of oats

3 cups unsweetened coconut flakes

1 cups of pumpkin seeds

1 cup almonds, chopped (or walnuts - you choose!)

1/2 hazelnuts

1 1/2 tsps cinnamon

3 1/2 ripe bananas (smashed)

2/3 cup melted coconut oil

To make

  1. Preheat oven to 160 °C

  2. In a mixing bowl combine oats, coconut flakes, pumpkin seeds, chopped almonds, hazelnuts and cinnamon

  3. Mix in the mashed banana and coconut oil. Be sure to combine well so that the wet ingredients coat the dry ones well.

  4. Spread the mixture over a large baking sheet and put in the oven.

  5. Bake for approxiamtely 45 minutes. Check often and toss every 15 minutes or so.

  6. When the granola is a lovely golden brown and doesn't feel damp, remove from the oven. You will notice as it cools it will crisp even more - for this reason, be sure not to over bake.

  7. Leave out to cool and then store in an airtight container in the fridge

Serving suggestions

Yogurt, oats, your choice of milk, berries, banana, frozen fruit, fresh fruit, museli or just eat out of the jar!

* store in the fridge for up to 1 week or the freezer for up to three months
