I can't tell you how simple, and I'm gonna say it...life-changing (in snack terms) these little bundles are. They're so satisfying. So easy. And you only need a bite (or two) sized piece to lift you!

Ingredients
2 cups oats
2/3 cup peanut butter
1/3 cup maple syrup
1/3 cup of coocnut oil or butter
2 1/2 tbsp unsweetened cocoa or cacao powder
1 cup unsweetened shredded coconut
To make
Melt the oil or butter in a pan over a low to medium heat
Add the peanut butter + maple syrup, stir until combined
Add the cocoa or cacao powder, and stir
Add the oats + shredded coconut, and mix in
Using a table spoon, scoop out the mixture and place on a baking sheet and press into a little bundle
Cool in the fridge for an hour or more
For me, the cooler the better!
Store them in an airtight container to keep fresh. They should last about a week.
You can make these your own. Sometimes I add hazelnuts or change up the nut butter, maybe even omit the shredded coconut. Just note that adding in more dry ingredients may effect how well they hold together. Add a little more oil or syrup as needed.
